Scenting a restaurant: dining room and entrance

20 September 2026 · PURRA

Agrumes coupés, la note hespéridée fraîche que l'on recherche pour parfumer un restaurant

Scenting a restaurant means placing a scent signature where the guest waits, sits down and leaves, never in the production area. A single well-placed device is usually enough: the PURRA G300 floor-standing diffuser covers 180 m², which takes in a dining room and its entrance when they form one continuous volume.

Key points:

  • The entrance is judged in a few seconds: it is the only place where the guest has nothing else to look at yet.
  • The PURRA G300 covers 180 m² and stands 101 cm tall; the PURRA X300S covers 100 m² for a smaller room.
  • A 100 ml refill lasts 625 operating hours on setting I, 400 hours on setting II and 200 hours on setting III, which is roughly 78, 50 and 25 days at eight hours of diffusion a day.
  • The kitchen and the production area are never scented: a diffuser lays a scent layer on top, it removes nothing of what is already in the air.
  • One scent per establishment, set gentle: it is the intensity that is adjusted between services, not the fragrance.

Why the smell of a dining room registers before the decor

The smell of a place is the first thing a guest perceives, because it arrives before the eye has chosen where to settle. At a restaurant door, sight is busy with a menu, a counter, a queue; smell has none of those distractions. That is why a neutral entrance goes unnoticed while a considered one is remembered.

The difficulty specific to hospitality is olfactory adaptation. Staff working on site stop perceiving the background smell of their own room after a few minutes, exactly as one stops smelling one's own home. The guest, by contrast, arrives with a fresh nose. That gap explains why an owner is often the last to learn what the room says.

A home fragrance does not correct faulty ventilation and does not replace cleaning. It adds a deliberate layer over a base that must already be clean. The same logic of welcome applies to hotels, which we covered in our guide to scenting a hotel zone by zone.

Which diffuser should you choose for scenting a restaurant?

The choice follows the volume to cover, never the number of covers served. A dining room often exceeds 100 m² once the entrance and the bar are counted: the PURRA G300, an aluminium column of 101 cm rated for 180 m², is then the only model sized for the whole. Below 100 m², the PURRA X300S is enough.

The mist is dry: cold nebulization breaks the fragrance into micro-droplets without adding water or heat, which rules out any damp deposit on the tablecloths.

PURRA, a French brand of cold nebulization fragrance diffusers, offers four devices and six scent refills, all interchangeable within the same bottle size. PureFlow™ technology diffuses the composition without heating it, which protects the top notes, the first to disappear with a heat-based process.

Two points to watch in a space open to the public. The device belongs out of reach of children and away from service aisles: a column stands against a wall, not in the middle of a walkway. And it runs while plugged in, so you never depend on the charge in the middle of service.

Both carry a 10,000 mAh battery and charge fully in around six hours, a figure given by the manufacturer. On a full charge, cordless running time reaches 293 operating hours on setting I, 146 hours on setting II and 88 hours on setting III, which is roughly 36 days on the gentle setting at eight hours of diffusion a day.

Does an ambient fragrance interfere with the taste of the food?

An ambient fragrance set gentle does not interfere with tasting, provided diffusion stays intermittent and the device is not standing on a table. On setting I, the cycle is 15 seconds of mist to 200 seconds of pause: the scent settles into the volume of the room instead of concentrating around one guest.

The question deserves a straight answer, because it is the only serious objection to diffusion in hospitality. Taste depends largely on retronasal olfaction: a note that is too present when the plate arrives does compete with it. That is an argument for restraint, not against the principle.

Three rules are enough. The device sits away from the tables, ideally near the entrance or a circulation route. The intensity stays on the lowest setting until the room shows it wants more. And the scent is chosen from a family that imitates no food.

Which scent for the entrance and for the dining room?

One scent per establishment, the same at the entrance and in the room: that is what makes a signature recognisable from one visit to the next. Two different fragrances in two neighbouring volumes cross in the passageways and produce a blend nobody chose. The Signature Refill 100 ml feeds both the X300S and the G300, at 24.90 €.

The column fills from the top: the 100 ml bottle is changed standing up, without tipping the device or taking the base apart.

On scent families, three directions work in hospitality. A fresh citrus note, clean and without sweetness, suits bright rooms and quick service. A sustained woody note supports a dark room, a wine bar, a vaulted cellar. A soft musk, more neutral, works anywhere the menu changes often.

What to rule out is simpler still: anything that evokes a food. Vanilla, caramel, almond, candied citrus compete directly with the menu and blur the reading of the plate. A scent signature inspired by grand hotels works here precisely because it does not smell of food.

When to diffuse, and what fragrance will not fix

The room is scented before opening, never at the height of service. The timer on the G300 and the X300S offers four positions, 1 h, 2 h, 4 h and 8 h: starting the device on 1 h while tables are being laid leaves the room ready for the first guest, without it running as plates come out.

A diffuser does not remove an established smell, it layers another one over it. This distinction is the most important in the whole article: a scent layer is not neutralisation. A frying smell drifting into the room is a matter of the extraction hood, of a service door that closes, and of textile care, not of one more intensity step.

Finally, a professional device needs regular maintenance, because a clogged nozzle ends up producing no mist at all. We set out the procedure in our article on a diffuser that no longer produces mist. The same device is often given at the end of the year to a supplier or a regular, an occasion we treat separately in our guide to a gift to thank someone.

Legally, nothing unusual: the device remains covered by the two-year legal guarantee of conformity, and refills fall under the same regime as any perfumery product. The full framework for scenting a business is set out in our guide to professional ambient fragrance.

Frequently asked questions

How many diffusers does a dining room with an entrance need?

One device is enough as long as the room and the entrance form a continuous volume under the 180 m² covered by the PURRA G300. As soon as the entrance is closed off by a lobby or a double door, it becomes a second volume and needs its own device.

The useful rule is not the number of covers but the number of volumes separated by a door. A low wall or a slatted screen let the mist through, a swing door does not. Count the levels too: an upper floor receives nothing of what is diffused below.

Can a diffuser scent a dining room without mixing with kitchen smells?

No, both smells always coexist: a diffuser lays a scent layer on top, it removes nothing of what is already in the air. On setting I, the cycle is 15 seconds of mist to 200 seconds of pause, which deliberately lets the background smell reappear between two passes.

It is the kitchen ventilation that decides the result, not the device. A properly drawing hood and a service door that closes do more than an intensity pushed to maximum. Diffusing harder over a frying smell produces a blend, never a clean room.

Should the same scent be diffused at lunch and at dinner service?

Yes, one scent per establishment: that is what makes a signature recognisable. What changes between two services is the intensity, and the timer offers four positions, 1 h, 2 h, 4 h and 8 h, enough to cover setting up and a break without reprogramming anything.

Changing fragrance during the day leaves a trace of the previous one on textiles and curtains, which then give it back. If a service calls for more presence, step up one level rather than changing the bottle. And a room is scented empty, before the first guests arrive.

Can an invoice be issued in a company name?

Yes. The invoice is sent by e-mail to the buyer and is not slipped into the parcel: enter the company name when ordering, or write to contact@purra.fr, where customer service replies within 24 to 48 working hours.

For a business, the simplest route is to order from the professional address: the invoice then carries the right details directly. An order already placed can also be corrected, provided the request arrives before the accounting close of your financial year.

How does pre-ordering work when a model is out of stock?

Payment is taken at the time of the order, and an e-mail goes out on the day of dispatch. Cancellation with a full refund remains possible as long as the parcel has not left, after which you have 14 days from receipt to change your mind. The PURRA G300 is currently offered on pre-order.

The restocking date is not announced in advance on the product page: it is confirmed by e-mail as soon as it is certain. For an opening on a fixed date, order early and keep an already available model as a second choice.

Can you be notified when a model is back in stock?

Yes, a back-in-stock alert appears on the page of every unavailable product. The address left is used only to signal the return of that specific product, with no newsletter sign-up, and shipping remains free from 49 € to France, Switzerland and Monaco.

This alert is not a reservation: it holds no unit. If the calendar matters, pre-ordering is the only route that secures one. Refills do not run into these shortages and are ordered separately.

For a dining room and entrance above 100 m², the PURRA G300 column is the format that covers the whole without multiplying devices.
